Thanks for the great walkthrough. I know it's been a while since anyone has added anything, but I just wanted to give you guys an update.
I'm running an Ubuntu 16.04 Opensim 0.8.2.1 region server in my home that is connected to my remote VPS ROBUST server.
Your Monit instructions still work!
The only issue that I had was that the pid file was not being deleted upon opensim close, so Monit was unable to restart opensim. To fix, I created a new folder with the proper permissions for the pid file.

This is great, especially since I cannot find a version of Mono that is stable with OpenSim.

This is working fine with Opensim version 9xx
Mono JIT compiler version 3.2.8 (Debian 3.2.8+dfsg-10)

I've been running mine on a VPS based in Germany (https://www.strato-hosting.co.uk/server/virtual/ - yes, I know, UK URL) for 4 - 5 years, with next to no problems. £11 per month, and I run my own email server on the same one. I also have a full apache install if I ever get around to another website, so I really can't complain about the cost (and at current exchange rates, probably less than $15 per month).

Up time has been awesome.

Running on Debian (they charge more for Windows, though if I ever had an interest in a Windows server, I could probably do it on my current package), and administered via SSH from my home machine (laptop on Debian or main rig on Arch).

For the money, given all I have, I really can't complain.
